Εggplant salad
3 large eggplant
1 medium onion, chopped
3 cloves garlic, crushed
½ bunch of parsley
½ cup capers
1 large tomato minced
½ cup olive oil
SALT
pepper
Vinegar
PERFORMANCE
Wash the eggplant and bake
the cortex in the oven grill. When cool, peel them and chop finely. Adds all the ingredients chopped, salt, pepper and controls similar oils and vinegars
